SIC (US 1987) : When I was a teenager, I asked the local restaurant owner from a small town named Goldthwaite, if I could work for him in the kitchen as a cook. He hired me on the spot and the first day I showed up, he put me to work painting the pantry shelves. That job took me over a week and I never laid my hands on food during that time. I finally finished painting and he started to show me how he runs the kitchen and how to cook in a restaurant. One day, he showed me the lettuce heads in the cooler and asked me to shred all of them. I did what he asked and when finished, he looked at me and said, “We are going to have to sell a lot of cole slaw this week since you chopped cabbage heads instead of lettuce heads. ” Yeap, the bug hit me. I needed to open my own restaurant.
But I didn’t get to start my restaurant for 27 years later. After high school, I received a master’s degree in software engineering and become a computer programmer for 25 years. After 25 years of programming computers, I prayed to God to give me a different book in my life and he helped me create The Flipping Egg.
Since opening in July 2012, I have met wonderful, awesome people in my life who have shown me the positive and negatives of owning a business. But most of all, I have learned that praying to God is essential and has allowed me to bring the right employees into my business. I have been blessed tremendously by God, my family, my friends, and my employees.
We take pride in our food by creating each item from scratch and using the freshest ingredients we can purchase. Most of these items are my own recipe.
If you noticed the pictures in the waiting room, those are my relatives that lived in the Scranton and Cisco area in the early 1900s. The painted picture of the barn is Lyndon B. Johnson’s barn at his ranch and is painted by my mother, who is a professional artist.
